Sevruga, like Beluga and osetra sturgeon, are found in the Caspian Sea. She is the smallest and most abundant of all sturgeons, taking approximately 7 years to reach maturity, with a maximum length of approximately 1.5 m and rarely weighs more than 50 pounds. This species is both trim and small, and features a pointed snout with an upward tilt. Her diamond-shaped exoskeleton plates are the most distinct within the sturgeon family. The flavor of her roe closely resembles that of the Beluga caviar, with a light butter, creamy taste and pale gray hue.
