Kirby Cucumber

Kirby cucumbers are small, firm, bumpy-skinned cucumbers, typically 3 to 6 inches long, that are the standard variety for pickling in the United States. They are sold unwaxed to allow brine absorption and are prized for their crunchy texture, thin skin, and small seed cavities, which also make them excellent for fresh salads and snacking.
